Now this is how you make potatoes! Sweet potatoes are already pretty amazing on their own, but what if there was a way to make them every better?
By adding bacon and bourbon to your sweet potatoes, you are going to end up the most delicious dish and new alternative to the usual mashed potatoes. Not that there is anything wrong with the usual, but you can always have a few types of potatoes to try something new! Check out the recipe below to find out how to make your new favorite potatoes!
Ingredients:
- 4 lbs sweet potatoes, peeled and cut into 1 1/2 inch chunks
- 4 slices thick-cut bacon, chopped
- 13 - 20 sage leaves
- 1/2 tbsp unsalted butter
- 1/3 cup milk
- 4 tbsp brown butter
- 2 tbsp bourbon
- 1/4 tsp salt
- 1/4 tsp pepper
Directions:
Place the potatoes into a large bot with water and bring to a boil. Continue cooking until you can easily pierce them with a fork (about 20 to 30 minutes).
In a skillet, cook your chopped bacon until all the fat is out. Pull the bacon out of the grease, scooping about 1 tbsp of the fat out of the pan and set it aside.
Add your butter to the same skillet. Once melted, add the sage leaves into the skillet and cook about 1-2 minutes per side or until crispy, then pull them off the heat and set them aside.
When your potatoes are ready, put them in a bowl and mash them a little bit with a fork or a hand masher.
Then add in the reserved bacon fat, the bourbon, the milk, and the brown butter. Use a mixer to whip them up. Add salt and pepper, using more or less if desired, mixing it in as well.
Scoop all the potatoes into a dish, spreading evenly. Sprinkle the bacon all over the top, and then add the sage leaves.
Serve with your holiday dinner this year if you want to try something new!
