German pancakes are absolutely delicious for breakfast or dinner as they can be served sweet or savory. Oh, the possibilities! This version of makes the pancakes bite-sized and perfect for serving a group of people.
Mini Baked German Pancakes can be topped with anything you like! We thought of three scrumptious flavor combos (see below), but the sky's the limit! Give these a go and experiment with your favorite toppings.

Ingredients:
- 3 tablespoons unsalted butter, melted
- 3 eggs
- 1 ½ cups all-purpose flour
- 1 ½ cups milk
- 1 teaspoon salt
- ½ teaspoon cracked black pepper
For the toppings
- Pulled pork and old cheddar cheese
- Caramelized onion and apple
- Cherry tomatoes, basil and bocconcini

Preheat oven to 425 degrees, and brush a muffin pan with melted butter.

Whisk together eggs, and add in flour and milk, mixing to incorporate. Season with salt and pepper.

Pour about 2 tablespoons of the batter into each prepared muffin pan opening, sprinkle with desired topping(s) and bake for 15"“20 minutes until golden brown and puffy.
