Why waste your money on delivery when you can make your own at home? With this Lemon Chicken recipe, you'll be glad you made it all yourself.
With the tanginess of a homemade lemon sauce and the crispiness in the chicken, this dinner will be ready in a flash and tastes delicious over a bed of rice. Don't forget the green onions and sesame seeds!
Ingredients:
For the chicken
- 1.5 lbs boneless chicken breast, cut into tenders
- 1 cup all purpose flour
- 1/2 cup vegetable oil
- Salt and pepper
- 1 egg
- 1 cup milk
For the lemon sauce
- 1/4 cup honey
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 1 pinch of chili pepper flakes (optional)
- 1/3 cup pineapple juice
- 1 cup lemon juice
- 1 teaspoon garlic powder
- 2 teaspoons apple cider vinegar
- 1 tablespoon cornstarch
- Zest of one lemon
For the garnish
- 1 tablespoon sesame seeds
- 1/4 cup sliced green onions
Directions:
In a small sauce pan over medium heat mix together all sauce ingredients, except corn starch, and stir until sugar melts.
Bring to a boil, and let cook for 1-2 minutes, stirring frequently.
Remove from heat, then whisk in corn starch and set aside.
Next, prepare chicken by cutting chicken into tenders, then pat them dry.
Mix together salt and pepper (a few shakes of each) with the flour, and dredge your tenders.
Mix together milk, egg, then take dredged chicken, and dip into the egg, milk mixture, then dredge in flour again.
In a medium-sized skillet, heat oil to 375 degrees. Fry your chicken tenders on each side until nice and brown, about 3-4 minutes.
Set fried chicken on paper towels to catch excess oil, then toss with lemon sauce, which will be thin, but should have thickened up some while sitting.
Garnish with toasted sesame seeds and fresh green onions. Serve hot.
