Ingredients
- Oil for frying
- Shrimp
- 4-5 cups popped popcorn
- 1 cup flour
- 2 eggs
- ½ teaspoon dried basil
- ½ teaspoon dried parsley
- ½ teaspoon cayenne powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- Cocktail sauce
Directions
- In a food processor, pulse popcorn, spices and salt and pepper until mixture resembles coarse bread crumbs. Transfer to a shallow bowl. Place flour in a second shallow bowl and egg in a third.
- Dredge each shrimp piece in flour, then in beaten egg, then in popcorn crumbs, turning to coat. Transfer to baking sheet and repeat with remaining shrimp. Discard any leftover flour, beaten egg and popcorn crumbs when finished.
- In a large skillet over medium-high heat oil to 355 degrees. Add shrimp, working in batches if necessary. Do not crowd skillet. Cook, turning once, until shrimp is well-browned on both sides and cooked through, about 4 minutes total. Sprinkle with additional salt.
