This is your favorite recipe from childhood, made better! The crispy salty bacon, ooey gooey brie cheese, and sweet caramelized onions take this grilled cheese from mundane to amazing with very little effort.
To make this scrumptious sandwich all you need to do is place sliced brie, bacon and caramelized onions on grilled bread in a large pan. The heat from the pan will melt the cheese and toast the bread to create the perfect crunchy crust for your cheesy melty sandwich. To make it extra special, drizzle some balsamic reduction over the top of the grilled cheese before digging in!
Here's how to make it.
Ingredients:
for the caramelized onions
- 3 large onions, sliced
- 2 tablespoons olive oil
- ½ teaspoon salt
- 4 tablespoons brown sugar
- 2 tablespoons red wine vinegar
for the sandwich
- 3-4 slices of bacon, cooked until crisp
- 4 -5 slices of brie cheese
- 2 slices of bread (we used rye)
Directions:
To make the caramelized onions, heat a large frying pan over medium heat then sauté the onions in the olive oil with the salt until soft and golden.
Add the sugar and vinegar and allow to caramelize. Set aside.
To make the sandwich, butter the bread on both sides then top with the onions, brie cheese and bacon.
Grill in a hot pan/sandwich press until golden brown and heated through.
Serve immediately (drizzle with balsamic reduction if desired).
