With the blisteringly cold weather, there is a silver lining: It is soup season!
You might dread the snow and ice, but as long as you can come home to a nice steaming hot bowl of soup, it isn't so bad! The best part about cooking with a crockpot is you can throw everything in before you leave for work and come home to a delicious meal. Check out this ridiculously easy recipe and learn how to make the perfect bowl of chicken noodle soup !
Ingredients:
- 1 large onion, peeled
- 2 large carrots, peeled and copped
- 2 celery stalks, chopped
- 3 chicken breasts
- 2 tbsp extra virgin olive oil
- 6 cups low sodium chicken broth
- 1 cup water
- Salt and pepper to taste
- 1/2 tsp dried rosemary
- 1 bay leaf
- 2 cups egg noodles
Directions:
Add the onion, carrots and celery to the crockpot and then put the chicken in.
Add in the olive oil, chicken broth, salt and pepper, water, rosemary and top with a bay leaf.
Put the cover on and cook on high for 4 hours.
After 4 hours, remove the onion and the chicken from the crockpot. Shred the chicken and add it back to the crock pot along with the egg noodles. Cover it back up and cook for another hour.
