Slow Cooker French Onion Soup Is Your Solution To This Season's Chilly Weather

French onion soup always feels like it's one of those extravagant things that you can only get at restaurants. But not anymore! This Slow cooker french onion soup is perfectly flavorful and really easy.

Ingredients:

  • 4 lbs yellow onions, peeled and chopped
  • 10 cups beef broth
  • 1 bay leaf
  • 1/2 cup unsalted butter, melted
  • 1/4 cup all-purpose flour
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 baguette, diagonally and toasted
  • 1 1/2 cups Gryere or swiss cheese, grated or sliced
  • Minced chives, for garnish

Directions:

In a large skillet, cook the onions, butter and olive oil over a medium heat until the onions start to caramelize.

Pour the cooked onions into the slow cooker and cover with the beef broth.

Add the bay leaf and salt and pepper to taste.

In a small bowl, whisk together the flour, balsamic vinegar and Worcestershire sauce and mix until smooth, then poor into the slow cooker.

Cover and cook on low for 6-8 hours, or on high for 3-4 hours.

Scoop the soup into oven-safe bowls, then top with one slice of bread and some cheese. Broil for 5 minutes or until cheese is melted and bubbly.
