Roasted Sweet Potato Salsa is Perfect for Feeding a Crowd

If you love sweet potatoes, then this is the recipe for you! It's sweet and spicy, and pairs perfectly with some salty tortilla chips for dipping. Serve this at your next family gathering and watch as it disappears before your eyes!

Not only does this salsa taste delicious on its own, but you can use it as a topping over grilled chicken or pork. You really can't go wrong with this dish!

Ingredients:

  • 1 sweet potato
  • 1 tbsp of oil
  • 1/8 tsp of salt (for roasting the sweet potato)
  • 1/2 tsp of salt (for the salsa)
  • 1 cup of fire roasted sweet corn
  • 1/4 cup of chopped red onions to the bowl
  • 1 Tbsp of chopped garlic
  • 1 Tbsp of chopped serrano peppers
  • 1/2 tsp of crushed black pepper (optional)
  • 1/2 tsp of taco seasoning
  • 1/2 Tsp of freshly squeezed lime juice
  • 1/4 cup of chopped avocado

Directions:

Preheat oven to 450 degrees. Peel one sweet potato and cut  into tiny pieces. It should make about 1-2 cups of cubed sweet potatoes

In a bowl, add the potatoes, 1 tbsp of oil and 1/8 tsp of salt.

Place the sweet potato in a baking tray and place in the oven. Bake for 20 minutes or until the sweet potatoes are soft and browning on the top

While the sweet potatoes are roasting, collect the other ingredients. Add 1 cup of fire roasted sweet corn.

Add 1/4 cup of chopped red onions to the bowl with the corn.

Add 1 Tbsp of chopped garlic and chopped serrano peppers.

Once the sweet potatoes are done, let them cool for a few minutes and then add to the bowl.

Add the salt, black pepper (optional), taco seasoning, lime juice and chopped avocado to the bowl with the rest of the ingredients.

Mix well and set aside for about 2 hours. Serve  sweet potato salsa with chips, as a topping over grilled chicken, or just by itself!
