Instead of ordering single serve bowls for the whole family, why not make one casserole to feed the whole family for a ¼ of the price?!
Once a week I like to to do an over the top dinner for my family. This time I jazzed up some chicken strips with KFC in mind. Stringy cheese, fluffy potatoes, creamy country gravy, need I say more!
Ingredients:
For Mash Potato:
- 1 1/2 lbs Yukon Gold potatoes, peeled and cut lengthwise into quarters
- 1/2 teaspoon salt
- 4 Tbsp heavy cream
- 2 Tbsp butter
- 1 Tbsp milk
- Salt and Pepper
For Country Gravy:
- 5 strips Bacon (cut into small pieces)
- 4 Tablespoons all-purpose flour
- Approximately 2 cups 2% milk
- Salt and pepper
For Casserole:
- 1 box chicken strips
- 1 can Corn niblets
- 1 jar French's fried onions
- 4 cups Cheddar cheese (grated)
Directions:
For Mash Potato:
- Place cut potatoes in pot of water and cook for 15 to 20 minutes, or until you can easily poke through them with a fork.
- Drain cooked potatoes, mash with butter, cream, milk.
- Mash the potatoes with a potato masher, until the mashed potatoes are smooth.
- Add salt and pepper to taste.
For Country Gravy:
- Heat bacon in a large, heavy bottomed skillet over medium heat until crispy. Add flour and combine. Add ¼ tsp salt and around 10 grinds pepper.
- Stir until the flour is about the color of peanut butter and smells nutty. Add ½ of the milk, reduce heat to medium low.
- Allow to come to a simmer, stirring constantly to avoid sticking
- Add milk by quarter or half cups until gravy has thickened considerably. If using a whisk you'll know the gravy is ready when drawing the whisk through the gravy leaves "tracks" from the wires that remain visible for at least 5 seconds.
- Add more pepper and another pinch of salt, to taste.
For Casserole:
- Preheat oven to 400
- Cook chicken tenders, prepare Mash potato, prepare white gravy.
- Evenly spread mash potatoes in 9x13 casserole dish.
- Even spread white gravy.
- Layer corn niblets on top.
- Layer Cooked chicken strips
- Cover with cheddar cheese.
- Bake 15min or until casserole is melted and bubbling
