If you love taco night but hate all the carbs, these Cauliflower Tortillas are for you! These yummy homemade tortillas are an awesome way to make your taco night a little bit healthier but still just as delicious.
Using cauliflower instead of processed flours cuts down on the unhealthy carbs that don't necessarily fit into your diet. It also is a good way to trick the kids into eating their veggies!

Ingredients:
- 3/4 Cauliflower head
- 2 large eggs
- 1/4 cup chopped cilantro
- Juice from 1/2 lime
- Salt and pepper to taste
Directions:
Preheat oven to 375 degrees.
Start by chopping up your cauliflower into small pieces and then put it in a food processor, blending it into a fine powder.



Put it in a microwave safe bowl and microwave it for 2 minutes, stir it and microwave it for another 2 minutes.
Then pour all the cauliflower into a cheese cloth and squeeze out all the juice.



Then add the cauliflower into a bowl and stir in the eggs, cilantro and lime juice.



Form your mixture into balls and flatten them on a parchment lined baking sheet.


Bake for 10 minutes on one side, flip and bake for another 8 minutes.
When you want to heat them to serve, fry them in a skillet for a few minutes to get them toasty warm.

Fill them with all your favorite taco fillings and enjoy!
