I think it would be safe to say that from time to time, we all have those nights where the last thing we want to do is get home and start making dinner. You've had a long day, you're getting home late, and all you want to do is sit down, put your feet up, and relax!
Generally the next would be to pull out the takeout menu's, and decide whether it's going to be pizza or chinese...well, not any more! Instant Pot General Tso's Chicken is to the rescue!
When I first tried this recipe I was a little bit nervous because at the time I was really craving a good general tso's chicken meal, and there is nothing worse than craving something so specific and not getting that craving satisfied. However, to my surprise this recipe actually turned out better than some of the take out orders I've placed!
With something being so easy to make, why wouldn't you give this recipe a try on those nights when all you want to do is come home and relax? You can do just that thanks to the quick and easy instant pot meals - give it a try!
1. Turn on instant pot and press "saute".
2. Pour in chicken cubes and saute with with sesame oil for 1-2 minutes.
3. In a medium sized bowl, mix together the rice vinegar, soy sauce, minced garlic, pepper flakes, ginger, hoisin sauce, and brown sugar.
4. Once mixture is well combined, pour over the chicken inside the instant pot.
5. Turn instant pot to "Manual High Power" for 10 minutes.
6. After 10 minutes do a quick release.
7. Turn the pot back on to "saute" and bring to boil.
8. Whisk in the cornstarch to the thicken the mixture. Whisk for about 2 minutes.
9. Serve over cooked rice and sprinkle with chopped onion and sesame seeds.
10. Enjoy!

- 1 teaspoon of sesame oil
- 6 tablespoons of soy sauce
- 6 tablespoons of rice vinegar
- ¼ cup of hoisin sauce
- 4 tablespoons brown sugar
- 2 tablespoons cornstarch
- ¼ teaspoon of ginger
- 1 garlic clove minced
- ¼ teaspoon of red pepper flakes
- 1 tablespoon of sesame seeds
- 1 chopped green onion
- 2 cups of cooked white rice
Directions
- Turn on instant pot and press "saute".
- Pour in chicken cubes and saute with with sesame oil for 1-2 minutes.
