Ingredients:
Marinade/Dressing
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 tbsp dried oregano
- 1/2 tsp salt
- Fresh pepper (to taste)
- Pinch lemon zest
Salad
- 2 boneless, skinless chicken thighs
- 8 oz pasta (any shape), cooked
- 1 bell pepper
- 4 oz grape tomatoes, halved
- 1/2 cucumber (1.5 cups diced)
- 1/4 cup parsley
- 2 oz feta
Directions:
Add the lemon juice to a bowl with the olive oil, the garlic, oregano, salt, pepper and a pinch of lemon zest. Whisk it all together until combined.
Pour the dressing into a Ziplock bag with the chicken thighs and let marinade for 30 minutes.
Cook your chicken in a skillet until it is ready. Remove it from the heat and let it cool.
Once it is cooled, cut it into bite-sized chunks.
Add the chicken into a large bowl with your cooked pasta. Add in the diced peppers, cucumber, parsley, feta, the left over marinade and another pinch of lemon zest.
Toss all the salad together until everything is combined and then serve!
