This Gingerbread Chia Pudding tastes like a dessert but is great for you. Throw the ingredients in a jar, stick it in the fridge overnight and bam! Ingredients:
For the pudding
- 1/4 cup chia seeds
- 3/4 cup unsweetened soy milk
- 1 tablespoon maple syrup
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cinnamon
- Sprinkle of ground clove
- Sprinkle of sea salt
For the toppings
- 1 tablespoon raisins
- 1 tablespoon chopped pecans
Directions:
Add all the ingredients (except the toppings) for the pudding to a mason jar and stir to combine.
Refrigerate at least six hours or overnight. Try to give the mixture an additional stir while it's setting.
Add toppings and enjoy!
