Crisp refreshing cucumber with a bold umami flavor. Your taste buds will be on a round trip to a far off land. It couldn't get any simpler!

Ingredients:
- 2 medium cucumbers, sliced very thinly
- 2 tablespoons rice wine vinegar
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 2 teaspoons soy sauce
- ½ teaspoon salt
- 1 teaspoon toasted sesame seeds
- Crushed red pepper flakes, to taste
Directions:


Slice cucumbers and place in medium bowl.

In a small bowl, whisk together all other ingredients.

Add to cucumbers. Stir to coat.

The salad may be made up to 4 hours ahead of serving but should be served the day it is made.
