Sometimes, you just want a nice light dinner that doesn't take too long to make. Especially with the holidays coming up, you will likely have some nights in between where you are going to want to take it easy on the cooking process.
Try out this yummy Shrimp Cilantro Lime Black Bean Shrimp and Rice dish for a light meal that isn't too heavy!
Ingredients:
Shrimp
- 2 tbsp olive oil
- 1 pound raw shrimp, peeled and devined
- 4 garlic cloves, minced
- 1/4 tsp salt
- 1/2 tsp red pepper flakes
Rice
- 2 cups chicken broth or vegetable broth
- 1/2 cup water
- 1 cup uncooked Jasmine rice
- 1/4 tsp salt
- 2 tbsp lime juice
- 1 can (15 oz) black beans, rinsed, drained
- 1/2 cup fresh cilantro, chopped
Directions:
Heat oil in a skillet, adding in the garlic with the shrimp.
Spread out evenly in your pan.
Add red pepper flakes and salt, and stir in with shrimp so they are all lightly coated.
Cook for roughly 3-4 minutes or until pink in color, then remove from heat.
Using the same skillet, add in water, broth, rice and salt, stirring until it is all mixed.
Cover and let cook for 15 minutes.
Now, add in your lime juice, black beans, cilantro, and shrimp to the rice.
Stir it all together and serve!
