If you are looking for an amazing dinner that the whole family will love, you should absolutely try this Chicken Bacon Ranch Spaghetti Squash.
Spaghetti Squash is such a versatile base for any meal, and with the added protein and flavor this recipe will quickly become one of your new favorites.
Ingredients:
- 1 large spaghetti squash
- 2 large chicken breasts
- 4 slices turkey bacon, cooked, chopped
- 1 packet ranch seasoning mix
- 4 ounces fat free cream cheese
- 2 ounces cheddar cheese, shredded
- salt to taste
Directions:
Preheat oven to 350 degrees.
Pierce your spaghetti squash with a fork around the entire thing and place it in the microwave for 5-7 minutes.
Then slice it in half and remove the seeds. Place it on a greased baking sheet cut side down.
Add your chicken on the same baking sheet and then sprinkle the ranch dressing on top.
Bake for 30 minutes or until both chicken and squash are cooked.
While it cooks, in a bowl mix together your cream cheese with the rest of the ranch dressing.
When you squash is cooked, shred it with a fork and put it into the bowl with the cream cheese, adding a small handful of cheddar cheese and stir it in.
Dice the chicken and add in to the mix.
Fill the hollowed squash up with the chicken ranch mixture.
Add cheese on top.
Finally sprinkle on some bacon.
