Birthdays are always accompanied by a birthday cake, but where does it say that the cake must be made of sugar, flour and eggs? Some people just don't like dessert and this is for them!
Picture the juiciest meatloaf, the fluffiest mashed potatoes, the crispiest fried onions and the freshest green peas. Now picture them as a cake! I know this isn't your traditional birthday cake but remember it doesn't have to be your birthday to enjoy a nice slice of meaty cake!
With our busy family schedule, this dinner cake is easy to make and ads a little bit more fun to a traditional meatloaf! The kids went nuts for it!

To make this cake, preheat oven to 350 degrees. Coat two 9 X 2 inch round cake pans with cooking spray; set aside. In a large bowl, mix ground beef, onion, garlic, ketchup, mustard, eggs and bread crumbs.
Gently press into prepared pans. Bake 20 - 25 minutes. Let stand 5 minutes; carefully remove with a spatula, and transfer to a wire rack set over a rimmed baking sheet. Tent with foil.
Meanwhile prepare mash potatoes and cook and crumble bacon.
Place 1 meatloaf on platter; spread 1 cup warm mashed potatoes over top. Smooth to create an even layer.
Sprinkle with 3 tablespoons of peas and fried onions.
Top with remaining meatloaf. Frost top and sides with mashed potatoes, adding bacon bits around the sides.
If you feel like getting really fancy, add some extra mashed to in a piping bag and create little rosette buds on the top using an open start tip.
Garnish the top center with peas and more onions.
Serve up while still warm and enjoy a full meal in one easy dish!

- 1 onion, diced
- 4 cloves garlic, minced
- 5 pounds ground beef
- ½ cup ketchup
- ½ cup Dijon mustard
- 3 eggs, beaten
- 1¼ cup bread crumbs
- ½ cup parsley, chopped
- Salt and pepper, to taste
For mash potato frosting:
- 5 pounds russet potatoes
- 1 cup butter, grated and chilled
For garnish:
- 1 pack bacon, cooked and crumbled
- Cooked peas
- French's fried onion
Directions:

- Add beef, ketchup, mustard, parsley, eggs, bread crumbs, salt, and pepper to bowl with vegetable mixture; mix thoroughly with your hands.
- Gently press into prepared pans. Bake 20 - 25 minutes. Let stand 5 minutes; carefully remove with a spatula, and transfer to a wire rack set over a rimmed baking sheet. Tent with foil.
