One of my favorite things when I was a kid was coming home from a long hard day of playing in the summer to an ice cold treat from my mother's freezer! Ice cream, popsicles, freezies and my favorite - ice cream sandwiches. When a friend of mine introduced me to these I was a little skeptical. How could you improve upon such a classic treat?
Boy, was I wrong!
The sweetness of the rice krispie treats mixed with the tanginess of the strawberry ice cream blew my mind. The classic ice cream sandwich still has a special place in my heart, but these have officially unseated them as my new favorite summer treat
Here's what you'll need to make them:
- 3 tablespoons butter
- 6 cups Rice Krispies cereal
- 4 cups mini marshmallows
- 1 teaspoon vanilla
- 1 tub of strawberry ice cream
- Sprinkles or other flourish
And here's how to make them:
Spray an 8" or 9" square cake pan with non-stick spray.
Remove the ice cream from the freezer to thaw slightly.
Melt the butter in a pan on low heat.
Add marshmallows and melt on low heat. Then, add in vanilla.
Gradually stir in the Rice Krispies. Turn off the heat.
Scoop half of the cereal mix into the cake pan and press into shape.
Spread a layer of ice cream on top of the cereal mix to desired thickness. Freeze for 5-10 minutes.
Scoop remainder of the Rice Krispie Treat mix on top of the ice cream. Press into shape.
Pop the entire thing in the freezer for several hours or overnight before cutting and serving.
