Whether i'm at work or at home, throughout the day I snack constantly. So choosing something healthy is always on my mind. So when I stumbled on a hummus recipe with avocados I knew I had to try it!
Whether you're vegetarian or not this is truly a delicious snack that packs a protein and vitamin enriched punch! Avocado gives an added creaminess, garlic and cumin provides a robust flavor and the freshness from the lime balances out this must make everyday snack!
Ingredients:
- 1 (15 oz) can chickpeas
- 2 medium avocados
- 3 Tbsp olive oil
- 3 Tbsp lime juice
- 1 clove garlic
- 1/8 tsp ground cumin
Directions:
- Drain and rinse chickpeas, add to food processor with olive oil, lime juice, and garlic. Pulse until smooth, about 2 minutes.
- Add cumin, avocados, and salt and pepper and pulse again until smooth scraping down sides if needed, about another 1-2 minutes.
- Serve immediately topped with extra olive oil or cilantro, if desired, and choice of dipping chip.
