I've lived my whole life eating basically the same potato salad wherever I went - family dinners, BBQs, summer parties, grandma's house - it seems like everyone has stuck to the same tried and true recipe for generations. I had a hankering for something a little different, so when I came across this recipe I knew I had to try it.
This Dill Pickle Potato Salad is the most delicious side dish you're going to eat this summer. It's everything you love about the traditional recipe with an added pop of dill flavor and crunch. This is going to be your new go-to potluck dish from now on!

Cook and cut up your pickles into bite-sized pieces and place them in a large bowl.
Slightly mash a few of the potatoes. Be careful! We aren't making mashed potatoes here so don't get carried away.
Add the diced celery, chopped pickles and hard boiled eggs (cooled) to your bowl. Mix to combine.
In a separate, smaller bowl, you're going to start making the dressing for the salad.
Mix together the mayonnaise, minced white onion, pickle juice, Dijon mustard, fresh dill and salt and pepper.
Add the dressing to your bowl with the potatoes and mix so that everything is evenly coated.
Place in the fridge for at least 2 hours before serving.
Once it's chilled, serve and enjoy! Try garnishing with more fresh dill and pickles for some extra dill-icious flavor!
